Ironically called 'pampalakas ng tuhod' (that which strengthens the knees), the authentic and sinfully high-cholesterol Filipino dish called BULALO is a light colored beef stew made rich by cooking beef shanks and beef marrow bones for hours in huge cauldron until much of the collagen and fat has melted into the clear broth. Variants of the seasonings are either salt and black pepper or with fish sauce, bay leaves and garlic plus whatever available vegetables around. Cabbage, pechay leaves and onion leeks are typical ingredients. Took these shots in a bulalohan (eatery that serves primarily bulalo) in San Pablo during an early morning breakfast before heading to the foothill of the sacred Mt. Banahaw.
