On a recent trip to Los Dos Molinos my wife and I had the opportunity to hang out while the family peeled the year's hatch chiles. It was cool seeing how a year's worth of extraordinary cooking begins with such a small task. Los Dos is a Phoenix institution and can be found nestled at the base of South Mountain in the historic Tom Mix house.
